Kielbasa with Rice and Veggies

What you need:
​
Kielbasa
White (or brown) minute rice (we do 2 cups uncooked)
Peppers (we use red, orange, yellow and green)--about 1/5 cups worth
1/2 Onion
Seasoning (salt, pepper, garlic, additional spices to add flavoring)

Pan fry the Kielbasa first, then add chopped veggies. Add in the spices to the pan. While cooking the meat and veggies, simultaneously prepare the rice. Once the rice is cooked, you can add it to the pan with the meat and veggies (we didn't have a big enough pan) or keep them separate.

Super quick, easy and tasty meal at camp!

Breakfast (or lunch....or dinner) Hash
​
What you need:
4 cups Potatoes--any variation--diced/cubed in small pieces
1 lb. Sausage
1/2 onion
1 cup peppers
4-6 eggs
shredded cheese
salt, pepper additional spices desired

Brown the sausage in a separate pan then set aside
Once potatoes are diced, cook in greased pan until soft
Add in peppers/onions/cooked sausage
Add in eggs (mix them in separate bowl prior)
Mix around to scramble eggs as it's heating the next two minutes or so or until eggs are fully cooked
Sprinkle on shredded cheese
Top with seasonings and serve!

Apple Bacon Cheddar Grilled Cheese

What you need:
Bread
Butter
Granny Smith Apples sliced like chips
Cheddar or Colby Jack cheese
Sauce--optional (we used Chipotle Aioli)
Pan fry bacon and set aside
Butter the bread slices
Add sauce to slices if you want (aioli, mayo, dijon, cream cheese, etc)
Add one slice of cheese, sliced apples and two pieces of bacon
Top with another slice of cheese and bread
Pan fry both sides or pie iron cook over campfire (about two minutes each side)
